Rabbi Zalmen Libersohn
and his family arrived in Mexico in April 1980. A recent graduate and expert in “Schechita,” Rabbi Libersohn began serving the Ashkenazi community and, beginning in 1992, also the Magen David Sephardic community in Mexico.
To meet the needs of both communities, a kosher food certification program was initiated, covering raw materials, ingredients, flavors, and more. These certifications were intended for both local communities and for export requirements to the United States, Europe, and Israel.
In 2003, I arrived as the Rabbi of the Orthodox community of Monterrey, Nuevo Leon (Northern Mexico). We began a “Schechita” program for the growing community and established the “Monterrey Kosher” (MK) certification, a strict Orthodox certification. MK serves restaurants, hotels for vacation and Passover projects, banquets, and events, in addition to certifying hundreds of food and beverage products that are affordable to everyone…
